Pineapple Shrimp with Walnuts
Slightly adapted from: Nick Eats Food
Ingredients:
- 1/2 cup water
- 1/2 cup sugar
- 1/2 cup walnut halves
- 1 lb of shrimp, peeled
- 3 egg whites
- cornstarch
- canola oil
- 1/4 cup mayonnaise
- 1 T honey
- 1T sweetened condensed milk
- 1 T fresh lemon juice
- 1 pineapple
Walnuts: Combine water and sugar in small saucepan, and bring to boil. Add walnuts, and boil for 2 minutes. Remove from pan and set aside.
Pineapple: Cut pineapple in half length-wise and scoop pineapple from inside. I have found the best method to be to cut around the edge of the pineapple, then cut strip of core and pineapple into chunks, and scoop out with a spoon. Discard core. Set chunks aside.
Sauce: Combine mayo, honey, sweetened condensed milk, and lemon juice well in a large bowl and set aside.
Shrimp: Dip shrimp in egg, then cornstarch, then fry in heated oil. Remove to a rack, or plate with paper towel to remove excess grease. (I fry in a cast iron skillet, and have found the best results when I fry in small batches.)
After frying all the shrimp, mix the pineapple, shrimp, and sauce well. Mix in walnuts. Serve in the pineapple boats.
