What's for Dinner [New Orleans BBQ Shrimp and Grits]

My love for New Orleans is no secret.  It holds a special place in my heart.  The spectacularly delicious food certainly doesn't hurt.  This recipe fits the mold perfectly.  It can be served over grits, as it is here, or with a good crusty bread and a salad.  Either way is beyond yummy.  Seriously.





New Orleans BBQ Shrimp
Ingredients:

  • 2 pounds jumbo shrimp (full disclosure, the shrimp pictured isn't jumbo, the other size was much too good of a price to pass up...)
  • 1/2 cup butter, melted
  • 4 T Heinz chili sauce (found in condiment aisle)
  • 3 T olive oil
  • 2 T Worcestershire
  • 2 T lemon juice
  • 1 1/2 t cayenne pepper
  • 1 1/2 t hickory liquid smoke
  • 1 t paprika
  • 1 t oregano
  • Tabasco, to taste
  • 3 cloves garlic, minced
Directions:
  • Mix all ingredients, other than shrimp, in a saucepan.  Simmer for 10 minutes and remove from heat. Allow to cool slightly.
  • Arrange shrimp in single layer in oven proof dish.  Pour in cooled marinade and mix well.  Cover and refrigerate for several hours or overnight.
  • Cook in 400 degree oven for 15-20 minutes.
Cheesy Ranch Grits
Ingredients:
  • 1 can chicken broth
  • 3/4 cups quick cook grits (not instant)
  • 1 T ranch seasoning
  • shredded cheddar cheese
Directions:
  • Bring chicken broth to boil.
  • Add grits, reduce heat to low.  Cook stirring frequently for 5 min.
  • Add ranch seasoning and cheese and mix well.
