What's for Dinner [Lemon Chicken with Capers and Artichokes]

This dish came about because I just didn't want to go to the store.....what a happy accident this is!  It turned out great and with minimal cooking, just mix and bake.  Yum.  Everything came out of my pantry or freezer.

Lemon Chicken with Capers and Artichokes
  • 3-4 chicken breasts (or any piece, this just happened to be what I had)
  • jar capers
  • juice and zest of one lemon
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 2 tsp Italian seasoning mix (make here, buy here )
  • Preheat oven to 400.
  • Mix all ingredients and spread evenly in 9x13 pan.
  • Bake for 25-30 minutes.
