What's for Dinner [White Bean, Kale, and Sausage Stew]

This Cooking Light recipe has been bookmarked for quite a while, as in years, and I'm just kicking myself for not making it sooner.  It. is. delicious.  And truly couldn't be easier to make.  It comes together very quickly and we've been enjoying the leftovers for lunches.



I do, however, have a confession about the "light" part....the first time I made this, I didn't pay much attention....and added the entire package of smoked sausage (or at least what Hubby hadn't snagged).  It, along with a couple other modifications, stuck.  Not eating the cheesy toast balances it out, right??  I was hesitant that there were so few ingredients, but it's simply yum.

White Bean, Kale, and Sausage Stew
Adapted from Cooking Light

Ingredients:

  • 1 T olive oil
  • 2 cloves garlic, minced
  • 1/2 onion, chopped
  • 1 package smoked turkey sausage
  • 3 cups chicken broth (or two cups broth, one cup water, since one can has 2 cups ;)!)
  • 2 cans cannellini beans
  • 4 cups chopped kale
  • 1/2 t. black pepper
  • 1/8 t. salt
  • shaved Parmesan, if desired
Directions:
  • In saucepan heat olive oil over medium heat.
  • Add garlic and onions and saute until soft.
  • Add sausage and continue to saute until just slightly browned.
  • Add broth, scraping the bottom of the pan, and beans.  Cover and cook for 5-10 minutes.
  • Add kale, salt, and pepper, cover again and cook for 5 minutes.
  • Serve with shaved Parmesan, if desired.
