Salmon is one of my favoite foods! I could eat salmon every day of the week and be one very happy camper. I love it as sushi, lox, poached, and my very favorite grilled just like this. This simple seasoning mix is certainly a tasty addition.

PSA: Kroger ClickList
Well, friends, it's been quite a start to the summer. The first week of the tennis program started off with a bang and while I thought it was just that stress that was causing me to feel like my heart was going to explode, I landed in the ICU the second week. All is great now though!! After a little shock (literally) my heart is back in rythm and it finally feels like summer can begin.
After all this excitement, Hubby and I just needed a few days to rest, relax, and take it easy. With that in mind, we decided to try Kroger ClickList and boy were we glad we did! It was incredibly easy, convenient, and allowed us to stock the fridge quickly with very little effort.
How it works:
Simply login to your Kroger account and click ClickList. From there you can complete your shopping by adding items to your cart. If you use a Kroger Plus card, there will be a special section for items you buy frequently. If you're anything like me, this will speed things along as I tend to buy the same items over and over. You can also shop sale items, by category, or simply search the item your seeking.
Within your selections you can give instructions, for instance green bananas or ripe avocados. You can also choose whether or not to allow substitutions.
After your cart is full, simply choose your pickup day and time and head to the store. (Hubby did this, and when I asked him to snap a few pics he looked at me like I had complely lost my mind. So, no photos....)
There are designated ClickList spots to park. Call the number on the sign and within minutes your groceries are being loaded into your car. They will alert you as to whether anything has been substituted and you have the option to decline the substitution.
This was absolutely perfect for our situation, especially considering the service fee is waived for your first three orders. This would also be perfect for the busy working mom, ordering for a sick friend who lives far away, or when you arrive home from vacation to an empty fridge, not to mention when you just don't feel like shopping.
Now that the fridge is full, it's time to head to the pool for some more R and R....doctors orders, right?!? ;)

Peanut Butter and Banana Energy Bites
Sweet friend KB has recently been raving about her new power ball breakfasts consisting of oats, bananas, and all sorts of other yummies she throws in there. So when Hubby and I had a bunch of bananas that were on their last legs we thought we'd go for it. I eat breakfast every day, but have a habit of running late so thought these would fit the bill nicely.
After scouring the internet I decided just to go for it without a real recipe. We don't have flax seed and don't really care for chia seeds so we kept to what we could find in the pantry. The end result was pretty yummy and they're so easy to keep on hand!
Peanut Butter and Banana Energy Bites
Ingredients:
- 2 large bananas, mashed (it ended up being about a cup)
- 2 cups oats, uncooked
- 1/4 cup peanut butter
- couple squeezes honey
- 1/4-1/2 t cinnamon
- small handful mini chocolate chips (we used semisweet because that's what we had)
Directions:
- Mash bananas in a bowl large enough to hold all the ingredients.
- Add remaining ingredients and mix well.
- Refrigerate mixture for about 30 minutes or until you're able to roll into balls.
- Roll into 1 inch balls.
- Refrigerate to store.
Notes:
- Throw in whatever sounds good to you! We've made them a few times and found that in this hive we like the cinnamon on the lighter side. Sometimes we add more banana, sometimes we leave out the chocolate, it all really just depends on what's on hand.
- You can make a large batch to keep in the freezer and just pull out a few at a time. Freeze individually on a cookie sheet before putting into a giant Ziploc. They defrost quickly.
- Use a scoop to form the balls quickly and uniformly!

On My Bookshelf [The Hypnotist's Love Story]
Typically I love Liane Moriarty's books, as I've shared before with Big Little Lies and The Husband's Secret, however, I found this one fell just a bit short. The Hypnotist's Love Story had such promise, but for whatever reason, it wasn't quite as gripping as the others. All in all, however, it was still a decent, easy read.

Ellen O'Farrell is a professional hynotherapist who work out of the eccentric beachfront home she inherited from her grandparents. It's a nice life, except for her tumultuous relationship history. She's stoic about it but at this point, Ellen wouldn't mind a lasting one. When she meets Patrick, she's optimistic. He's attractive, single, employed, and best of all, he seems to like her back. Then comes that dreaded moment: He thinks they should have a talk.
Braced for the worst, Ellen is pleasantly surprised. It turns out that Patrick's ex-girlfriend is stalking him. Ellen thinks, Actually, that's kind of interesting. She's dating someone worth stalking. She's intrigued by the woman's motives. In fact, she'd even love to meet her.
Ellen doesn't know it, but she already has.

Sip and Shop Sunday [Nordstrom's Sale]
Happy Sunday! I must have been living under a rock (or more like I've been working insane hours getting the tennis program started) but today is the last day to shop Nordstrom' Half Yearly Sale. With that in mind I've picked out some favorites. So....
Today I'm sipping....
This Mojito-esque cocktail is so light and refreshing...the perfect sweet treat on a hot day. Stepping out to the garden to pick the mint seems to make it that much more like summer.
